Can’t say I don’t agree with the science; faster, more even cooking, more surface area for caramelization, etc. But it’s still a hotdog. Better to start with a good quality frankfurter, rather than cheap quality weiners.

      Frankfurters are true sausages with casings. Most hot dogs are casing-less cured logs of ground meat loosely based on frankfurters or wienerwurst. Even though we call most hot dogs “franks” or “wieners”, they’re homogenized to the point of lacking any kind of intensity or spice that the originals have.
